Cheesy Bean Dip...

This dip doesn't look very appetizing, but it is so, so good!!

Cheesy Bean Dip

1/2 (8 ounce) package cream cheese, softened
1/2 cup sour cream
1 (16 ounce) can refried beans
1/2 (2 ounce) package taco seasoning mix
1 tablespoon dried parsley
2 tablespoons chopped green onions
3/4 cup salsa
1/2 (8 ounce) package shredded Cheddar cheese
1/2 (8 ounce) package shredded Monterey Jack cheese

Preheat oven to 350 degrees F (175 degrees C).

In a medium bowl, blend the cream cheese and sour cream. Mix in the refried beans, taco seasoning, parsley, green onions, 1/2 the Cheddar cheese and 1/2 the Monterey Jack cheese. Transfer the mixture to a baking dish. Spread salsa over bean mixture. Top with remaining Cheddar and Monterey Jack cheeses.
Bake in the preheated oven 20 to 30 minutes, until cheese is slightly browned.

Oooohhhhh....enough said!

I made a simple bean dip yesterday for lunch...just a can of refried beans and two different cheeses melted on top served with salsa on the side. I was surprised that both my kiddos gobbled it up and ate their carrots.

I may have to borrow this recipe for something special for my hubby. He loves a good mexican night once in a while.
